Lemon-Lavender Tea Biscuit

Sometimes you just want a light biscuit for a sweet snack. Reminiscent of the taste of Pez, I absolutely love this flavor combination. Lemon-lavender go together like PB&J, like “milk” and cookies, like Lucy & Ethel.

I made this little biscuit because I like something sweet with my tea late at night. I drink more tea than most which gives me enough excuses to eat cookies before bed. With all the raw things I eat or drink, I refuse to give up my hot tea in winter. In summer I switch to a sun brewed tea.

So there’s a trick to these biscuits. Raw cookies in general don’t have that “crack” when you bite into them, so to get them to a biscuit consistency, you have to make them thin and leave them in the dehydrator overnight to 24 hours. I cheated and kept nibbling through the process. I’m perfectly okay with them at a softer stage, but I will admit, the crisper the tastier.

The first time I made this recipe I mixed almond meal with fresh plantain flour. Plantains have a different aftertaste and the kids didn’t care for it. So I tried it again without plantain and I agreed with them. I prefer the plantain flour with savory recipes like the Rosemary Olive Oil Crackers and ended up omitting it for this recipe.

I also used Meyer lemons the first time. Don’t do this. Meyer lemons don’t have a strong enough lemon flavor to get the sharpness you want. Regular lemons from your tree or the market will give you a much better flavor.

RAW VEGAN RECIPE: Lemon-Lavender Tea Biscuit

Lemon-Lavender Syrup

2 tblsp raw sugar, pulverized

1 tsp lavender flowers

zest of one lemon

juice of one lemon

Place ingredients together in a microwave/dishwasher safe bowl and put it in your dehydrator at 115 for 4 hours, stirring occassioally.

Biscuit Dough

1 1/2 cup almond meal

Lemon-Lavender syrup

Mix together until it forms a dough ball. If it’s too dry add a little water, one tablespoon at a time. If it’s too wet, add almond meal one tablespoon at a time. Roll small balls and flatten into rectangles. Taking a small fork, press at the edges all around the biscuit to make a design. Pop biscuits into the dehydrator at 115 degrees overnight or 24 hours. Enjoy!
