Savory Nori Seaweed Crackers
I hadn’t made these seaweed crackers in a long time and I’ll be damned if I can figure out why not. They were one of the foods that I was introduced to early on in my raw experiences and I remember liking them immediately. Now everyone here likes them too. No sooner were they out of the dehydrator and everyone got a first taste, they quickly ascended to ‘favorite’ status. And even though I made two trays of them, I’m already getting orders to make more. A success story if there ever was one.
Melissa doesn’t like seaweed. Period. So she wouldn’t even try one to be polite. Her nephew recently sent a big box from Japan full of odd treats that you couldn’t find anywhere here if you tried. She brought me over some light little crackers and I was like, “no, don’t give these to me; you keep them for yourself”. But she insisted. I thought she was just being sweet. Then I found out that those little crackers had seaweed in them. Sweet, my ass! She was trying to get rid of them! Good. More for me!
Snacks with Benefits
Seaweed is high fiber; it contains more fiber per weight than many fruits and vegetables. Besides being a great source of Omega 3 fatty acids, seaweed is also host to a slew of vitamins and minerals including iodine, calcium and iron. It’s one of the few foods that vegans can eat that actually also contains vitamin B12! Seaweed is a wonderful food to incorporate into your diet if you have thyroid issues because it’s inherent combination of tyrosine and iodine directly contributes to maintaining thyroid health by making two of the key hormones responsible for keeping the thyroid functioning properly. As someone who’s had to keep an eye on their thyroid for much of my adult life, this is valuable information!
Fortunately Melissa has no thyroid issues. Otherwise I’d make her eat it. She doesn’t have the excuse of being allergic to it, like she does with celery. ( I’ve tried asking the Medical Medium what one does if they’re allergic to celery, considering that it’s a part of every healing protocol. No answer on that yet).
Anyway, tomorrow I’ll make more. These things don’t stick around long with six people living in the house and let’s face it: if they like them, it’s a way healthier snack than your average run-of-the-mill greasy potato chip. Six trays of seaweed chips coming up!
Raw Vegan Recipe: Savory Nori Crackers
1 cup brazil nuts
1/2 cup chopped carrots
1/4 teaspoon turmeric
1/2 teaspoon Celtic sea salt
1/2 cup lemon juice
2 garlic cloves
package of nori seaweed sheets
Mix nuts and carrots in food processor and process to a grainy consistency. Add all ingredients through garlic cloves and process further till relatively smooth. A little extra lemon juice can be added if needed.
Cut nori sheets into small, cracker size squares and put a small dollop (approximately 1/2 teaspoon) of the carrot mixture on each square. Place each square on mesh dehydrator sheet.
Dehydrate at 110 degrees Fahrenheit for approximately 5-6 hours. Seaweed should be slightly crispy and carrot mixture dry.
Makes 2 trays of crackers.
