Pineapple Salad with Jerk Plantain Chips

We eat a lot of salads around here and I love fruit dressing. So it seemed like a good idea to try and make a dressing using pineapple. The acid content isn’t as high as lemon, lime or vinegar, making it a super light alternative for people looking for something a bit milder.

This is a simple recipe, but you will need to soak the rice from 24-48 hours. If you use forbidden rice, it will not sprout but will open up and soften. If you use purple rice, it will sprout but won’t get soft. As a matter of fact, no other rice will get soft the way Forbidden Rice does. Forbidden Rice is also the only rice you can eat raw. It is a different variety than other purple rice.

Marie and I have a lot of conversations about not making things complicated. Sometimes complicated to her means using a dehydrator. I realize a lot of you might not have one, so instead of using plantains, sprinkle our delicious jerk seasoning Spiced Tropical Fruit Chips on bananas. No dehydrator? No problem!

RAW VEGAN RECIPE: Pineapple Salad with Jerk Plantains

Forbidden Rice

1 cup Forbidden Rice

Rinse the rice in filtered water and then in a jar or bowl, fill with water to cover two times the amount of rice. Cover with a dish towel and set aside for six hours. Drain and fill the bowl again. Cover. If your house is warm the rice might be ready in 24 hours. If your home is cold it could take 48 hours or more. Drain the rice when ready. You’ll know as it will split and will look like you cooked it.

Plantains

1 plantain

2 tblsp of our jerk seasoning Spiced Tropical Fruit Chips

Peel and slice plantains a half inch thick. Dust them with the jerk seasoning and place in dehydrator for 12-24 hours at 115 degrees. If you want them to be hard chips I recommend you cut them very thin and leave in for 24-48 hours.

The Dressing

1 cup pineapple

2 tblsp olive oil

pinch salt

pinch pepper

Blend all ingredients until smooth.

The Salad

A handful of frisee lettuce (or use arugula)

1/4 cup sliced pineapple

A quarter of a red bell pepper, sliced

1 scallion, diced

Forbidden Rice

Pineapple dressing

Assemble the salad by placing rice at the bottom, then the lettuce, peppers, pineapple, scallions and plantains. Drizzle dressing over it all and enjoy!
