Orange Pomegranate Salad With Mango Chia Dressing

This colorful summer salad replete with oranges and pomegranate seeds, gets big points in my book. Not only is it delicious and refreshing on these warm days but its so damn pretty too! The pomegranate has so many health benefits, it’s ridiculous! It’s cancer fighting,  a potent anti-inflammatory and its anti-oxidant levels are three times higher than they are in red wine or green tea. The list just goes on. If you’ve got a guy at home who’s having some problems in the bedroom, pomegranate is good for that too; it’s been linked to improvements with erectile dysfunction. Suffice to say: pomegranate is a fabulous fruit to include in your diet wherever possible.

Both pomegranate and oranges are high in Vitamin C and, thereby, natural immunity boosters that help repair damage in the body and ward off disease. The high Vitamin C content makes them great for your skin as well because Vitamin C is necessary for the synthesis of collagen that helps your skin to look and feel great. Vitamin C literally helps keep us less wrinkly and is one of our big allies in the fight against premature aging!

On top of everything else this salad gets an extra punch with the addition of chia seeds which are an excellent source of Omega 3 fatty acids, antioxidants, fiber, magnesium, zinc, iron and calcium; that’s a long list for a little seed!

RAW VEGAN RECIPE: Orange Pomegranate Salad with Mango Chia Dressing

THE SALAD

4 cups romaine lettuce, torn

2 oranges, sectioned

1 cup pomegranate seeds

2 kiwis, sliced

3/4  cup chopped pecans

In a bowl mix together all ingredients. Toss thoroughly and pour dressing on top. (Yes, it’s that easy; I told you raw food doesn’t have to be an arduous affair!)

MANGO CHIA DRESSING

Juice of two oranges

1 ripe mango, chopped

3 tablespoons olive oil

2 tablespoons chia seeds

Put the orange juice and mango in a blender and blend . Add olive oil. Blend well. Stir in chia seeds.
