Brussel Sprout Slaw with Lemon Thyme

We have a very small farmer’s market not too far from the farm. There are only 6 vendors, but every week these lovely people set up their tables in hopes of selling their wonderful produce. We try to support all our local growers when we aren’t growing something ourselves (like the lemon thyme in this recipe). This week a vendor who I have been buying from pretty consistently had brussel sprouts.

I know many of you don’t like brussel sprouts. It’s a shame that you might have some childhood trauma from poor recipes. Or maybe you were forced to eat them as a kid. I’m here to tell you, give these amazing little cabbages another shot, you won’t be disappointed.

High in nutrients, antioxidants and fiber and rich in Vitamin K, brussel sprouts are often overlooked. Brussel sprouts are also easy to prepare, and cook, if you so choose to, but I think that’s where the problem lies. Like most cabbages, cooking wilts the leaves and releases a smell that can turn people off before they get a chance to taste their yummy goodness. I have so many delicious recipes for brussel sprouts and you can definitely adapt your favorite to suit your taste, but it was crazy hot last night, and this seemed like the best idea.

Cold slaw is raw cabbage, brussel sprouts are cabbage, so brussel sprout slaw makes perfect sense. Since this is both a raw recipe and a vegan one, I wanted to make something fresh, light and still pair well with any bbq or sandwich like regular slaw, or you can eat it on it’s own, which is what I did.

Raw Vegan Recipe: Brussel Sprout Slaw with Lemon Thyme

Basket of brussel sprouts (shredded)

1 shredded carrot

1/2 diced apple

juice from 1/2 a lemon

2 sprigs fresh lemon thyme, leaves only (or 1/4 tsp dried thyme)

1/4 tsp fresh brown mustard seed

1/8 tsp fresh yellow mustard seed

pinch of salt (or to taste)

1/8 cup olive oil

pinch pepper

Emulsify oil and mustard seeds, salt, pepper, thyme and lemon together. Put shredded sprouts, carrots and apples in your favorite bowl and toss in dressing.
