Tempura Battered “BLT”

There is a restaurant down the road apiece that makes a delicious fried green tomato BLT. But since we aren’t cooking, eating anything fried and maintaining a vegan diet, the original is out. Well let me introduce you to our version.

As a kid I would have a BLT all the time. My mom considered them a healthy lunch. It’s funny to think that now, but back then if something had a vegetable in it, it was good for you. Even if those vegetables consisted of iceberg lettuce and a tomato (I know, I know).

I love tomatoes. I think it’s my favorite vegetable (fruit) and I put them in everything. Or I eat them alone with a pinch of salt…like every single day. Never met a tomato I didn’t like. I desperately searched for green tomatoes. Considering they were in season, I thought for sure I would find them. Unfortunately I couldn’t, so I opted for a random tomato, choosing a large firm heirloom. I’ve since found green ones, but I prefer using a Brandywine or Pineapple, they are juicy and full of flavor.

RAW VEGAN RECIPE: TEMPURA BATTERED “BLT”

Tempura Batter

1 cup almond meal

3/4 cup pureed zucchini

1 tblsp nutritional yeast

1/4 tsp onion powder

1/8 tsp salt

1/4 tsp garlic powder

1/8 tsp pepper

2 tsp filtered water (if more needed, add drops at a time)

1/8 tsp oregano

1/4 tsp basil

Mix all ingredients together and set aside for a few minutes.

1 large tomato sliced

Dredge the tomato slices in batter and place in dehydrator on Paraflex sheet at 115 degrees for 2 hours. Flip tomatoes onto mesh sheet and dehydrate another hour.
