Orange Pomegranate Salad with Citrus Chia Dressing

Sometimes you just feel like something light, refreshing and easy. It’s been so hot lately that, even though I’m not usually a big mono-meal girl, it seems like I’ve been seduced to that side by the sheer availability and ease of all this great summer produce that’s not really around for the rest of the year. Suddenly I’ve found myself indulging in mega portions of peaches, whole watermelons and baskets of cherries – all at different times, of course – and calling that breakfast or lunch or dinner. In between I eat even more fruit. It’s been satisfying on so many levels but perhaps the biggest boon has been… nothing to prepare whatsover. But today I decided to bring my knife out of retirement for a moment to create this very ethereal Orange Pomegranate Salad. I added some nuts for myself but take them out of the picture and this is a no fat summer feast that just shakes things up ever so slightly and brings a little green into the picture. Otherwise I’ve been a human fruit basket.

Mind you, there’s nothing wrong with that either.

Except I still keep getting that whole ‘where are you getting your protein?” argument. Oddly usually coming from someone eating chips. And I’m starting to feel like a broken record, telling everyone that yes, plants all have protein too and they should stop worrying about what I’m up to and maybe get rid of the Doritos. Sometimes I really have to hold my tongue. And my fork… to prevent myself from stabbing someone with it. ‘Patience’, I tell myself. They’ll get it eventually. Or maybe they won’t. You can lead a horse to water but you can’t neccessarily make them eat your Orange Pomegranate Salad.

I sure try, though. And, if at first I don’t succeed, I eat that salad all by myself.

RAW VEGAN RECIPE: Orange Pomegranate Salad with Citrus Chia Dressing

2 cups romaine lettuece, chopped

1/2 cup red cabbage, sliced thin

1 orange, peeled, separated and cut into bite sized pieces

1 cup fresh pomegranate seeds

1/2 cup pecans, chopped

In a bowl, mix together all ingredients until well combined. Pour dressing on top.

Citrus Chia Seed Dressing

Juice of 2 oranges

1 tablespoon agave nectar

1 tablespoon chia seeds

Whisk all ingredients to combine.
