Some vegetables are tricky to eat raw. Heating and cooking changes their texture and sometimes, you need a little heat to enhance the flavors. The dehydrator is perfect for helping spices to marinate and soften vegetables without stripping them of the nutrients that are too often cooked out of food. Take eggplant for instance. Thai Coconut Soup
This is the soup I’ve been wanting to make. Ridiculously quick and easy, this soup will warm you up on a cold day. I made this Thai Coconut Soup in the dehydrator, but as Marie informed me, you can heat it on the stove as long as you check the temperature while heating to keep it raw. Turmeric, coriander and cumin are the base for many a curry. Here’s a fun fact: curry doesn’t actually refer to a spice, but a sauce. That’s what ‘curry’ actually means: ‘sauce’.
