Pineapple Mounds Bar Dessert
Cravings, they’re either going to keep me very happy or be the death of me. I know I said I would never make another chocolate candy again, but here I am. While in the supermarket checkout I glanced over and there, tempting me with it’s coconut goodness was a Mounds Bar. I picked it up, contemplating my memory of it’s chocolate coconut melange on my taste buds and then made the fatal mistake of reading the ingredients. I put it down and ran back and grabbed what I needed to make my own.
The choice to put pineapple in the Mounds Bars were purely out of having too much pineapple in the house to eat before it went bad. I don’t regret that decision, it really kicked it up a few notches. Everyone here agrees and scoffed them down faster than I made them.
Honestly, I originally wanted the chocolate to be hard, and it just didn’t set right. I didn’t care and neither did anyone else, so these are more like a light creamy dessert…don’t judge me!
RAW VEGAN RECIPE: Pineapple Coconut Mounds Bar Dessert
Pineapple Coconut Center
1 cup mashed fresh pineapple
1/2 cup cashews (soaked 6 hours or overnight)
1 tblsp coconut oil
3/4 cup shredded coconut
1 tblsp maple syrup
Blend cashews, coconut oil and maple syrup until smooth. Fold in pineapple then fold in shredded coconut. Place into molds or in a glass cake pan and place in freezer. You can also just drop them onto parchment paper by tablespoons. If you use a the cake pan, slice when ready and then pop back into the freezer for another couple of minutes. It softens quickly.
Chocolate Ganache
6 tblsp coconut oil
4 tblsp maple syrup
6 tblsp raw cacao
Blend all ingredients together well and dip frozen pineapple coconut center into chocolate. Place on parchment paper and place back into the freezer. Remove a half hour before serving.
*the trick is to use warm water from the tap to heat up the coconut oil. This will also make it easier to blend smoothly and give that shiny look. I put a bowl of warm water under the chocolate as well. It makes it a lot easier to dip the chocolate, however, it makes the filling melt faster. You will have to play with it, it’s not easy, but so worth it.
