Spring Mix Strawberry Salad with Almond Pecan Brittle
It’s hard not to love this strawberry salad; it is a thing of beauty, with the beautiful play of red strawberries on the green salad and the luscious dressing glazing it all in pink. Not to mention the crunchy spiced brittle:! Everything combines so perfectly to create a truly sumptuous creation. It doesn’t seem enough to just call it a salad. It’s more like a poem on a plate. In any ase it has the distnction of being one of my all time favorite meals! Theres no component of this salad that wouldn’t steal the show all on its own but it’s the rosy dressing that really puts my sense…
Herbed Raw Asparagus and Artichoke Rice Pilaf
For a long time now, I’ve been wanting to do some experimentation with asparagus. Recipes using raw asparagus just aren’t seen very often and I guess I wanted to know:”Why not?” I’ve often eaten the tips off my aparagus raw and always thought they tasted good so there had to be some reason why we don’t see them all over the place in the raw world. If cauliflower can make the cut, why not those poor, ultra nutritious raw asparagus? Inquiring minds want to know. Well, to be sure, I looked it up and raw asparagus are perfectly fine to eat. I knew it! The only thing they have against…
Asian Slaw with Forbidden Rice
Besides trying to competely recreate old favorite dishes from a sheer sense of craving and nostalgia, one of my favorite pasttimes is rifling through vegan and vegetarian recipe books and finding recipes worthy of a raw redux. That’s essentially how this Asian slaw came to be. I love to just start going through the ingredients in any given recipe and subbing one ingredient for another in my head. Sometimes I just plain talk to myself. it’s spooky for everyone else. I’ll be sitting on the couch muttering as if incanting some strange spell, periodically running to the kitchen to check on whether or not certain things are in the refrigerator…
Green Cabbage Steaks with Black Olive Tapenade
Lately I seem to be having a love affair with cabbage. I’ve already made these green cabbage steaks three times; twice before I ate them so fast I completely neglected taking pictures of them, never mind sharing any with anyone else. I don’t think Melissa actually believes that I made them at all because there’s never anything left when she comes ’round and no one else knows anything about them either. It’s like a covert operation. This time around I only had enough cabbage to make two steaks but I remembered to take pictures as evidence. I really am doing the work! Unfortunately, once again I ate both of those…
Rye Bread
Oh boy! I don’t think there’s anything more difficult in raw preparation than coming up with a raw-vegan bread. So when I asked Marie if we could eat rye raw (say that 10 times fast). I was thrilled when she said yes. And our rye bread pursuit began. Rye bread is very aromatic. The scent comes from caraway seeds and not the rye bread itself. So be generous when adding it if you want it to taste like the rye bread you’re used to. If it was up to Marie it would be called Caraway Bread instead, she wanted me to use twice as much. Warning to those that are…
“Braised” Brussel Sprouts with Cranberry Vinegar
I know, I know, a lot of you are not fans of brussel sprouts. Well around here they are a popular side dish that are scoffed up in moments. Like with everything we make around here, most of our dishes come from cravings. While out shopping I saw the balsamic brussel sprouts sitting in the deli counter and I was hungry. I figured a little cheat wouldn’t hurt, but as I stood in line to order, I noticed how wilted they looked. The lone cranberry sitting on top was dark and barely recognizable. The food looked sad to me, even the color started to look a bit unappetizing and I…
Coconut and Kelp Noodle Ramen
I’ve had a yen to make something like a raw ramen for a while now but I really wasn’t in the mood for any more zucchini noodles. Recently, a guest who was staying here for awhile left behind a package of kelp noodles and that was all the encouragement I needed. While this doesn’t quite mimic regular ramen, we all have to admit that when we think of ramen, we’re thinking of that packaged brick of noodles with the spice packet included. The thing many of us survived on in college. So I’m glad to say that this meal could not even be placed in the same category. But it…
Red Deviled Tomatoes
Deviled eggs were a perrenial favorite once upon a ‘not vegan’. I remember seeing them every time I went to any kind of event, whether it was a fancy grown-up function or a some parent/teacher get together at my kid’s school. But, in an effort to remove animal products from our picture, the deviled egg went to the wayside too. So, how do we get that deviled taste without the egg? How did we possibly come to deviled tomatoes? The answer to the whole conundrum came to me in a shape. The Roma tomato is kind of egg-shaped isn’t it? I actually do have to ask you this question since…
Stuffed Poblano Peppers with Avocado Whip
Keeping with our winter warming trend, I decided to make a more hearty dinner using poblano peppers. Okay, normally this recipe would have just about everything we wouldn’t post on this site. But that shouldn’t stop us from adapting any meal to fit our raw-vegan sensibilities. I chose the poblano peppers because it’s heat index is mild to medium once warmed in the dehydrator. With a flavor more reminiscent of a jalapeno, I thought it would make the perfect pepper for anyone trying to make this at home. Don’t fret if you don’t like any spice, this recipe with work with bell peppers too. And for those of you who…
Rollatini with “Smokey” Red Pepper Sauce
My zucchini plants are still going strong. It’s exciting because we are well past the season and it’s pretty damn cold here in northern New Mexico. Even in our sunroom, the temp gets chilly at night. I was expecting maybe one or two more tiny zucchinis, but to my surprise, a mutant began to grow and rollatini was born. Weeks into it’s growth I knew it was going to be a whopper, but I was not prepared for the final outcome. Considering we got that nifty new mandolin, I started planning and got these amazing thin, wide sheets of perfect zucchini. I contemplated making lasagna, but Marie and I agreed…
