Sometimes you just want a light biscuit for a sweet snack. Reminiscent of the taste of Pez, I absolutely love this flavor combination. Lemon-lavender go together like PB&J, like “milk” and cookies, like Lucy & Ethel. I made this little biscuit because I like something sweet with my tea late at night. Thai Coconut Soup
This is the soup I’ve been wanting to make. Ridiculously quick and easy, this soup will warm you up on a cold day. I made this Thai Coconut Soup in the dehydrator, but as Marie informed me, you can heat it on the stove as long as you check the temperature while heating to keep it raw. Persimmon Breakfast Parfait
It’s persimmon season. These delectable little fruits are among our favorites. I’m more partial to Fuyu (they are the shorter, firmer variety) but for cooking the Hachiya is better. No cooking here but I used both in this because, why not? When choosing persimmons you want the skin to be smooth and deep orange in color. The Fuyu will be firm, but it could be crunchy or softer inside. Either way, it is the sweeter variety and I love to add it to salads. Three times a charm! I can’t say getting these delicious confections perfectly raw and vegan was easy. While getting the flavor profiles of the rainbow cookies was pretty simple. It’s winter and let’s face it, the last thing someone would think of is a raw soup because that somehow puts ‘cold’ in your mind.
